How to make the perfect Salzburger Nockerln?

The Perfect Salzburger Nockerln Recipe

Ingredients (serves 4):

  • 4 egg whites
  • 4 egg yolks
  • 80g powdered sugar
  • 80g all-purpose flour
  • 1 tsp vanilla extract
  • 1 pinch of salt
  • 4 tbsp butter
  • 4 tbsp breadcrumbs
  • Powdered sugar for dusting

Instructions:

  1. Start by preheating your oven to 220°C (430°F).

  2. In a large bowl, beat the egg whites until stiff peaks form. This should take about 5 minutes.

  3. In another bowl, beat the egg yolks and powdered sugar until light and fluffy. This should take about 2-3 minutes.

  4. Sift the flour into the egg yolk mixture and gently fold it in with a spatula.

  5. Add the vanilla extract and a pinch of salt to the egg yolk mixture.

  6. Gently fold in the egg whites into the egg yolk mixture. Make sure to fold in the egg whites very carefully, so as not to deflate them.

  7. Grease a large skillet with 4 tablespoons of butter and sprinkle 4 tablespoons of breadcrumbs on top.

  8. Pour the batter into the skillet and place it in the preheated oven. Bake for 10-12 minutes, or until the Salzburger Nockerln are puffed up and golden brown.

  9. Remove the skillet from the oven and dust the Salzburger Nockerln with powdered sugar.

  10. Serve the Salzburger Nockerln immediately, while they are still warm and fluffy.
